Tell us about NessAlla.
NessAlla Kombucha first began operating in 2008, but our partnership started the prior year when we started teaching kombucha brewing classes here in Madison. These classes were a hit and it wasn’t too long before word began spreading about our kombucha knowledge and expertise.
Workshops sold out and we soon had a formidably-sized SCOBY farm. Yada yada yada (to borrow a line from Seinfeld) NessAlla Kombucha was born, becoming one of the nation’s first small, local kombucha breweries.
Fast forwarding to present day, we’ve gone from a small start-up on Madison’s east side with a staff of two to a thriving beverage business with a custom-built brewing facility, an awesome crew of ten employees, and distribution in nine states throughout the Upper Midwest.
All this while maintaining our commitment to creating a quality product, sticking to our values, and helping the community gain a deeper knowledge of health and well being.
The two questions we frequently get asked:
1. Where does the name NessAlla come from? This one is easy – it’s a truncated mashup of our names, Vanessa and Alla. Vanessa + Alla = NessAlla.
2. What the heck is kombucha? Simply put, kombucha is a fermented probiotic drink made from tea, sugar, a SCOBY* and starter (finished kombucha) from a previous batch.
(*SCOBY is an acronym which stands for Symbiotic Colony Of Bacteria and Yeast. In short, it’s beneficial bacteria and yeasts that work synergistically together to produce a certain type of ferment. Where can we get your kombucha?
NessAlla Kombucha is available for purchase in 16oz bottles, 64oz growlers, as well as on-tap at various locations around the Madison area.
For a full list of available retail outlets, bars, and cafes, check out our website. We also like to get out and about in the world. You might run into us at one of the area’s many festivals, farmers markets, or serving up samples at your local grocery store.
What do your customers love most about your company? What do your fave customers have to say about you?
You may have seen our bumper stickers that read, “Who’s Your Booch?” – It’s thrilling to see them around Madison because we know that the answer is: “NessAlla!” As business owners, it’s pretty incredible to see people become not just consumers of your product, but fans.
We also receive a lot of love from people who incorporate NessAlla Kombucha in their healthy-living plans: pictures with our bottle beside yoga mats, enjoying the outdoors, and staying fit.
But all work and no play makes for a dull life. When it’s time to kick back and relax, our customers also enjoy indulging in kombucha cocktail and radlers (a 50-50 mixture of beer and kombucha). We have a ton of recipes for drinks on our site, and you can also find us in many specialty drinks around town.
What do you love about Madison – why is it a great fit for NessAlla?
While we’re not Madison natives – or even of Wisconsin for that matter. Vanessa was born in Hawaii, and Alla was born in Russia. A happy series of accidents led both of us here and there’s no other place we’d want to call home. And that’s really what Madison has become to us: home.
It’s where we’re raising our children, where we’ve met some truly amazing people that we’re lucky enough to call friends, and where there is a strong sense of community, without whom NessAlla would not have succeeded.
